Apple & Calvados Stuffed Roast Pork with Cracklin

Firstly make the stuffing. Melt the butter in a large frying pan over a low heat. Add the onions and sage and gently cook for 10 minutes, until softened. Next, increase the heat to high, pour in the Calvados and cook for 1 minute. Let the mixture cool, and then stir in all the remaining stuffing ingredients.

Brazilian Cachaça Chicken Kebabs

Finely chop ½ the mint and place in a mixing bowl. Add the lime juice, zest, Cachaça, chillies, sugar, oil, cayenne, salt and pepper and mix well.

Pour 1⁄3 of the marinade into a small sauce pan and reduce by half to make a syrup. Set aside.

Prepare a marinade by chopping the chilli finely and combining with the oil, add all the ingredients (leaving out the sesame seeds) and pour over the chicken wings.

Place in the fridge and leave to marinade for at least an hour.

Stout Chilli & Cornbread

Set up the barbecue for baking (in-direct method). For gas a medium or half way heat, 180°C is perfect.

In a large bowl, combine all the ingredients together except for the sweet corn kernels. Mix until you have a smooth cake mix consistency, then add the sweet corn.

Crunchy Roast Potatoes

In the kitchen

Boil the potatoes with 1 tbsp of salt for 8-10 minutes until soft and slightly crumbling at the edges.

Drain and allow the potatoes to dry for at least 10 minutes.

Gently shake the potatoes in the pan to fluff up the edges. Coat with the ground almond and season with salt.

Butterflied Leg of Lamb with Anchovies & Lemon

To bone and butterfly the leg of lamb you will need a sharp boning knife and a chopping board.

Start by locating the bone then make an incision above it to reveal it. Cut down to the bone and along, feeling for the joint at the end.

Continue cutting around the bone, folding back the meat as you go.
